BUTCHERY CLASS

Take your knowledge of meat to the next level and learn about seam butchery from Left Bank co-owners Ross Flynn and Jason Powers. Our demo class gets you up close as our butchers break down half a pig and use every part of the animal to minimize waste. We’ll discuss all the flavorful cuts (that you can’t find at the grocery store), whole-muscle curing, and sausage making. See where your favorite cuts come from and get to know some of the pig’s most underrated cuts. We recommend bringing a notebook!

COOKING CLASS

Learn how to braise, roast, pan-fry every cut in our case, as well as how to make pan sauces. A whole animal butcher shop is only successful if our customers are able to enjoy our lesser known cuts in their own kitchens. This class will give you tips, tricks, recipes, and confidence you need to cook every cut like a pro. This class caters to a wide range of home cooks—from the basic beginner to the aspiring chef.
