Spring Grasses for the Masses

We love our beef year round but spring always brings in some of the best beef of the year. This week we brought in two cows from Chad at Randleman Farm and they kind of blew our mind. Once the rain and warmth comes and the spring grass, rich in sugar and carotenes, begins to grow in abundance, the cows absolutely gorge themselves on their favorite food. Working with small farms, we see the result of this in a very appreciable way.

It shouldn't be overlooked that Eliza's pigs have been absolutely incredible. Intramuscular fat on a pig is something that is only achieved through great genetics and excellent management. To see a marbled pork chop is to see the food as it should be. We eat the hell out of this pork and always tell folks if they could eat one thing from the shop, make it a ribeye pork chop. This week we will have a lamb again, so celebrate spring with a delicious ruminant.
